Who is this course for?
This course is for anyone who wants to learn about the basic techniques, tools and materials required to decorate cakes, and who wishes to go on to take qualifications at a higher level.
Entry requirements
You will not need experience of Cake Decorating as beginners are welcome on this course. But, as the course involves taking notes, and using weights and measurements, you will need to have basic levels of English and maths. You will have a short initial assessment at the start of the course to ensure that it is suitable for you.

- How to make Royal Icing
- How to cover a board
- How to pipe shells
- How to make moulded flowers and leaves
- Design a simple cake top
- Simple modelling techniques
- An awareness of employment opportunities in the confectionary industry
How will I learn?
- Through tutor demonstration and instruction
- By exploring equipment, tools and techniques
- By producing a finished sugar craft item for assessment
- By producing a small portfolio containing samples, information on techniques you have learned, and photographs of work that you have made

Your responsibilities as a learner on this course
To ensure that you gain maximum benefit from your course you will need to attend all sessions, be punctual, and bring the correct materials to each session.
Important information
- In addition to the course fees, a total spend of up to £20.00 will be needed to purchase equipment for the whole course. Although this will be spread across several weeks.
- You will need to bring appropriate protective clothing whilst in the training kitchen, including a full length apron or white overall and protective head covering such as a clean headscarf or hat which must be worn at every session.
- For the first session you will only need to bring a small roll of greaseproof paper, a medium sized palette knife, which can be purchased for about £3- £4 from any DIY Cake Decorating shop, a pen, writing pad and folder.
